AIP ‘tater’ tots

Want to impress your kids?  Make these AIP ‘tater’ tots…but, I challenge you to not eat them all yourself.  I had some leftover chimichurri sauce that the kids and I dipped these in, it was amazing.

AIP Tater Tots

I can't even begin to describe my happy with this one!  I mean, tater tots-enough said!  I intended to make these and serve them with dinner...they didn't make it.  Between myself and the kids, we 'taste tested' them, until they were gone.  

They are a bit labor intensive, but, the most time consuming part is hand forming them and I just sat at my table and watched an episode of 'The Crown' while making them.

Ingredients
  • 5 green plantains
  • 1 tsp Himalayan salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup lard or cooking oil I used both bacon lard and avocado oil and both tasted great
Instructions
  1. Peel and divide plantains into chunks, toss in a food processor.  Pulse for 15-20 seconds.  

  2. Add seasonings and continue to pulse until it looks like rice size, be careful not to over process or it will paste.

  3. Take a small spoonful at a time and roll and form into 'tater tots'.  

  4. Pan fry in a heavy bottomed pan, I used my cast iron.  Once golden brown, set on paper towel to drain and season with salt to taste.  Try not to inhale.
