AIP Pork Loin


AIP Pork Loin

  • 4 lbs Pork loin or pork tenderloin (whichever is cheaper)
  • 1/2-1 lb Bacon chopped
  • AIP Rub to taste
  • AIP Bacon Kraut
  • cooked veggies or white sweet potatoes
Bacon Gravy
  • 1/2 quart Chicken broth
  • Bacon grease (whatever is left over from the bacon you cooked)
  • 1 tsp AIP seasoning salt
AIP Slurry
  • 2 tbsp Arrowroot powder
  • 1/4 cup Cold water
  1. After trimming excess fat, slice pork loin into very thin chops.

  2. Season to taste with AIP Rub or other preferred rub. Let sit for 20 min.

  3. Chop bacon, cook until brown and set aside (saving all grease).
  4. Flash sear pork chops on each side and layer evenly in a casserole dish.
  5. Layer pork chops in baking dish and cover with AIP Bacon Kraut.

  6. Cover with any cooked veggies or white sweet potatoes you might have.

  7. Add AIP slurry to bacon grease. Mix thoroughly over medium heat. Once incorporated, add AIP Seasoning Salt and chicken broth, whisking frequently. Let simmer on low for 5 min.

  8. Pour gravy over bacon and chops.
  9. Cover with foil and bake at 350o for 40 min.

  10. Let stand for 5-10 min. to rest.

    Hi Jen. Its so good to see AIP recipes designed for a family. I look for AIP family sized batched cooked meals and there just isn’t any out there. I’ve got a family of 5 who eat like a family of 7 (teenage boys) and we usually have friends drop in who I feed also. I’m so tired of cooking 24/7. I’m so glad to have found your site.
