Rich, tender, juicy and oh so elegant!  This is a family favorite around here when we get the chance to have such a fancy cut of beef (watch those sales!).  

A good rule of thumb is to cook  your tenderloin for about 12-14 minutes per pound, if you're wanting rare (that 125 degree internal temp) or a bit longer if you want medium rare.  Also, plan on about 1/2 to 3/4 pound of beef per person, depending on age and appetites.  

While fancy looking, this is a very simple way to feed a group without it being super fussy or high maintenance.  Garnish with some of my AIP horseradish coleslaw, yum!

  • 4 lbs beef tenderloin
  • liberal sprinkle AIP seasoning
  1. Rinse tenderloin
  2. Trim off large fat and silver skin.
  3. Tie up with butchers twine.
  4. Drizzle with olive oil.
  5. Generously sprinkle with AIP season salt. (see notes for link)
  6. Sear over med-hi heat till caramelized.
  7. Remove from heat.
  8. Roast @400° till internal temp is 125°-130° (med-rare).
  9. Pull @125, if you like it rare, 130 for a little more done.
  10. Let rest loosly tented with foil for 10min before slicing.
