AIP Baked Greek Chicken
I love this chicken recipe, not only because of the marinade, but, it stays so juicy. It’s great by itself, in soup, on a salad, I’ve even chopped it up and mixed it with avocados, red onions, cilantro and lime juice, it’s divine!

AIP Baked Greek Chicken

Ingredients
- 2 tbsp olive oil I typically use a bit more
- 1 juice of a lemon
- 3 cloves garlic minced
- 1 tablespoon dried oregano
- 2 tbsp fresh parsley chopped or 1 tbsp dried parsley.
- 1 tsp salt
- 2 boneless, skinless chicken breasts
Instructions

Mix olive oil, lemon juice, garlic, oregano, parsley, and salt.

Place chicken breasts into a large zipper bag. Pour mixture into the bag and let marinate for 20+ min.

Bake at 450o for 30-35 min. or until internal temperature reaches 165o. Time will vary depending on how cold your chicken is. Typically, I will let marinade on on the counter while I prep my sides. If you try to cook your chicken straight from the fridge, you risk drying out your chicken.
